Ingredients:
For the chicken burgers:
– 1 tsp garlic powder
– 1 tsp dried thyme
– 1 tsp oregano
– 2 tsp smoked paprika
– Salt & pepper
– 2 chicken breasts (butterflied)
– 200g breadcrumbs
– 2 x eggs (beaten)
– 150g plain flour
– 2 x brioche burger buns
– Rocket
– 4 slices of chorizo
– 100g Manchego cheese
– Roasted red peppers
– 500ml sunflower oil
For the garlic mayo:
– 1 clove garlic
– 1 tsp English mustard
– 4 tbsp mayonnaise
Method:
First, combine the garlic powder, thyme, oregano, smoked paprika and some salt and pepper in a large bowl.
Butterfly the chicken breasts and coat them in the spice mix.
Next, coat the chicken in the plain flour, then the beaten egg and finally the breadcrumbs.
Heat up the oil and fry the chicken until golden brown – about 3 minutes, then bake them at 180 degrees celsius for about 10 minutes.
In the meantime, make the garlic mayo. Finely chop the garlic clove then add the mustard, mayo and some seasoning. Done.
Pile the chorizo, roasted red pepper and manchego onto the chicken then grill for about 5 minutes – until the cheese is bubbling.
Spread some garlic mayo on both sides of the bun, add some rocket, then your chicken burger…
