Ingredients:
For the waffle batter:
– 125g plain flour
– 1 tsp baking powder
– 10g caster sugar
– 1 tsp salt
– 1 egg (beaten)
– 240ml milk
– 100g crispy bacon bits
– 50ml maple syrup
For the fried chicken:
– 2x chicken breasts
– 1 tsp garlic powder
– 1 tsp smoked paprika
– 1 tsp oregano
– 1 tsp thyme
– salt & pepper
– 150g plain flour
– 2 eggs (beaten)
– 150g Panko breadcrumbs
To serve:
– Loads of crispy bacon
– Lettuce
– Tomato
– Red onion rings
– BBQ sauce
– Sriracha
Method:
First, make the waffle batter. Combine the flour, baking powder, sugar & salt in one bowl and the milk, egg and maple syrup in another, then slowly whisk the wet ingredients in to the dry until you have a smooth batter. Add in the bacon bits, and cook in a waffle iron for five minutes.
For the fried chicken, combine the garlic powder, paprika, oregano, thyme and some seasoning in a bowl and coat the chicken.
Next, coat the chicken first in flour, then beaten egg, then breadcrumbs, then repeat.
Deep fry for five minutes at 180 degrees celsius then put in a hot oven for another five minutes to make sure it’s cooked through.
Build the burger. Layer the lettuce, tomato, red onion, fried chicken and bacon then top with BBQ sauce and Sriracha.
