Ingredients:
For the salsa:
– 1x onion (sliced)
– 2x green chilli (finely chopped)
– 1x red pepper (finely chopped)
– 2x cloves garlic (minced)
– 1tsp cumin
– 1tsp smoked paprika
– 1tsp sugar
– 1tsp oregano
– 300ml passata
– 50g cherry tomatoes
– Handful coriander (finely chopped)
– Salt & pepper
For the guacamole:
– 3x avocados (skins and stones removed)
– 2x cloves garlic (minced)
– 1x green chilli (finely diced)
– Handful coriander (finely chopped)
– Juice of 1.5 limes
– Salt and pepper
To serve:
– Orange peppers (hollowed out and carved into halloween masks)
– Loads of tortilla chips!
Method:
First make the salsa. Cook the onion, peppers, garlic and chilli over a medium heat until softened.
Add the cumin, smoked paprika, oregano, sugar and seasoning…
Pour in the passata and simmer for 5-10 minutes until thickened. Next, stir in the cherry tomatoes and coriander then leave to cool.
For the guacamole, combine the avocado, garlic, chilli, coriander and lime juice in a large bowl…
Then mash it all up with a fork!
Fill up some of your pepper jacko-lanterns with salsa and some with guacamole…
