Here’s How To Make The Mexican Eggs Benedict

Ingredients:

– Chipotle sauce
– 2 Eggs
– English muffin
– Chorizo (about 100g, cooked)
– Few of sprigs of coriander
– 2 tbsp guacamole
– 6 slices of jalapeño (or more if you like it spicy…)

Method:

First, toast your English muffin and spread the guacamole on both sides.

 Next, sprinkle over the cooked chorizo…

Then add the jalapeño slices…

Poach your eggs for 3-4 minutes in simmering water (add a few splashes of vinegar to help keep the egg whites together).

Let any excess water drain from your poached eggs then carefully lay them on the muffins.

Finally, top with the Chipotle sauce and the coriander.
