Here’s How You Make Thai Scotch Eggs

Ingredients:

– 250g sausage meat
– 1 tbsp ginger
– 1 tbsp garlic
– 1 tbsp chilli
– 1 tbsp lemongrass
– 1 tbsp coriander
– 6 eggs
– 200g plain flour
– 3 eggs
– 250g breadcrumbs

Method:

For the sausage layer, mix the meat with ginger, garlic and chilli.

Then add in the lemongrass, coriander and seasoning.

Soft boil the eggs for 4-5 minutes.

Once cooled, peel the eggs.

Roll out the sausage meat.

And wrap each egg in an equal layer of meat.

Flour, egg and breadcrumb each egg.

Before dipping the eggs in egg and then breadcrumb a second time.

Deep fry at 180 degrees Celsius until golden.
